Today’s Breakfast: Delicious Protein Pancakes!

I loveee pancakes! more so protein pancakes, it’s become my new thing. I love the idea of eating pancakes with something a little beneficial like protein & healthy fats to contribute to my summer body process Lol. I also like to think of breakfast as the only time to indulge during the day, so given in to your sweet cravings is more than ok and for me this stops my sweet cravings through out the day. So yes, this is one of my simple yet delicious pancake recipes, so enjoy!

What you’ll need:


1. Measuring cups to measure flour.

2.Measuring Spoons for liquids

3. Whisk

4. Sieve

5. Measuring Jug

6. Bowls for dry & Wet ingredients.

7.Ladle to pour pancake mixture over heat

8. ..and of course a plate to serve 🙂

1 1/2 Cups Spelt Flour (This is relatively high in protein)

1/4 Cup of Vanilla Whey Protein Powder (60ml)

 1/4 teaspoon of Baking powder (optional)

 2 Tablespoons of sugar or sweeter like Stevia

 Pinch Of Salt (optional, you can skip this process if using salted butter)

1/2 Teaspoon of Vanilla Extract (optional)

30g  Melted Butter (Unsalted)

300ml Milk (Could substitute for water)

1 Large Egg

Fruits of your choice

Maple syrup or agave nectar or any toppings of your choice!


Directions: In a large bowl, combine all your dried ingredients like the flour, protein powder, salt sugar, baking powder. Use the sieve, to sieve through the dried ingredients to combine them well and most importantly to diminish any lumps.

In a separate bowl combine liquids like melted butter, milk, vanilla extract and eggs (if you really want to go all out with the protein theme, then leave the yolk out and use just the egg whites, but ofcourse that’s optional) then whisk.

Create a well in the centre of the dry ingredients and pour the wet ingredients use a whisk to combine everything together.

Over medium heat, add a knob of unsalted butter to the pan then pour your mixture using a ladle or a jug and cook on both sides for a minute or so. Once all is done, add your toppings then serve 🙂 Healthy Spread Alternatives: Peanut butter, Bananas or any fruit of course.

*ps if you could have any toppings over you pancakes what would it be? mines nutella heavenly nutella! haha x
