Something For Brunch: Pizza Omelette With Peppermint Tea

For a quick spur of the moment recipe why not give this a try? It’s really simple and delicious + healthy too. I’ve played around with a few ingredients to create something rather fun.Please feel free to do so too to meet your preference!

Ingredients:

Coconut oil – 1 Tablespoon
Red onion – 1/2 Diced
4 medium eggs
Salt  (For clean eating eliminate salt)
Pepper
1 medium Tomato Diced
Smoked paprika – 1/2 Teaspoon
Lemon zest
Handful of spinach sliced
Cheddar cheese 1/4 cup
sprinkle of Oregano / herbs
1 slice of bread roughly chopped (optional)  (use gluten free or wholemeal)

 

Method:

Whisk eggs in a bowl, add the bread whisk again, then set aside .

Add your coconut oil or butter (ghee) to a medium sized frying pan.

Then add your diced red onions,tomatoes, season with salt, pepper and paprika saute for a few minutes.

Pour the beaten egg and bread mixture over the onions and tomatoes. Zest 1 side of a lemon (just a little bit)

Sprinkle paprika again if you like, then the spinach. Let the egg fry for 2 minutes without turning it over.

Then sprinkle some cheddar cheese and oregano, turn it over or like me, transfer the pan under the grill for a few minutes. This give a delicious charred flavour whilst ensuring the top is cooked.

Once it is done take the pan out and leave it to settle for a bit before serving.

Tastes great with tea or freshly squeezed juice!
