I love this super easy, delicious lamb chops! Two things i learnt whilst experimenting with the marinade is that garlic mayonnaise doesn’t just work as a dipping sauce but also as the perfect marinade for lamb alongside, cinnamon and fresh rosemary. See how to make this below!
Season both sides of lamb chops with salt. Mix all the ingredients together in a bowl to make the marinade and then marinate lamb chops, cover the lamb chops and leave to marinate for a few hours, best overnight in the fridge. Take out of the fridge 30 minutes prior to cooking. Add some vegetable oil to a frying or griddle pan and fry for 3-4 minutes on each side. To ensure the meat is cooked through if you like yours well done transfer the lamb chops into the oven and cook for a further 8-10 minutes. Set aside once cooked.- 6 Lamb chops
– 1 teaspoon of garlic & ginger paste
– 1 bouillon cube or large pinch of salt
– 1 teaspoon of chilli powder or smoked paprika
– 1 teaspoon of rosemary
– 4 tablespoon of garlic mayonnaise
– 1/4 teaspoon of cinnamon powder
– 1 tablespoon brown sugar
– 4 tablespoons of Extra Virgin Olive oil
– Freshly cracked black pepper
– 4 tablespoons of vegetable oil

The lamb chops are can be served, with rice or tortilla wraps (just tear the meat off the bone and add to the wrap alongside crunchy lettuce and shredded carrots) you can even enjoy the lamb chops with cous cous or or spinach salad 🙂
