VALENTINES DINNER | HAPPY VALENTINES!

Happy Valentines loveliess! I thought I’d share a super simple Valentine’s day recipe for you to recreate! It’s even perfect for if you don’t cook often and want something super simple and delicious…. hopefully this should help! You can watch my full video below, I also have a list of ingredients along with the written methods.

Lamb Chops

– 6 Lamb chops
– 1 teaspoon of Garlic & Ginger paste
– 1 Bouillon cube or large pinch of salt
– 1 teaspoon of chilli powder or smoked paprika
– 1 teaspoon of rosemary
– 4 tablespoon of garlic mayonnaise
– 1 teaspoon mustard (optional)
– 1 tablespoon brown sugar
– 4 tablespoons of Extra Virgin Olive oil
– Freshly cracked black pepper

Season both sides of lamb chops with salt. Mix all the ingredients together in a bowl to make the marinade and then marinate lamb chops, cover the lamb chops and leave to marinate for a few hours, best overnight in the fridge. Take out of the fridge 30 mins prior to cooking and grill for 3-4 minutes on each side. To ensure the meat is cooked through if you like yours well done transfer the lamb chops into the oven and cook for a further 8-10 minutes. Set aside once cooked.

Lamb chops sauce:

– Left over marinade sauce
– 250 ml chicken stock
– 150 ml red wine
– 1 tablespoon of Butter

Cook the marinade sauce in the same pan you used to cook the lamb and add the butter, stir and the stock and wine. Alternatively you can use water in replacement of the stock if you don’t have any available.

Rice:
4 cups of cooked rice
2 tablespoons of Ghee (Clarified butter) alternatively used oil
1 large onion, diced
1 table spoon garlic & ginger paste (alternatively an inch of ginger and 2 cloves of garlic, diced)
1 teaspoon curry powder
1 tablespoon tomato paste
2 bouillon cubes or salt (adjust amount to preference)
1 teaspoon of freshly chopped chilli’s
white and black pepper

Fudge Brownies:

170g of Dark chocolate
150g of Unsalted Butter
250g of Brown sugar (brown sugar makes it extra gooey)
80g of Flour
3 eggs
1/4 cup of Cocoa powder
1/3 cup of Chocolate nibs
Salt

*Use the best quality of ingredients you can afford.
Melt the butter and chocolate, to do this, place a bowl over a pan of steaming water and add the chocolate and butter, stir gently until the contents have melted. Once the chocolate has melted add the sugar (gently) and stir in and add the salt. Add one egg and stir in then add the remaining eggs stir then add cocoa powder and flour mix gently but be careful not to over mix.

In a baking tray spread the chocolate nibs then pour in the chocolate batter and spread evenly. Bake in a pre-heated oven Gas Mark 4 (177 degrees Celsius)  for 25-30 minutes.

Once the brownies are baked leave to rest for 20 mins before serving. Slice some strawberries and set aside until it’s ready to be served.

Chocolate sauce:
60g chocolate
20g butter
50ml milk
– Melt all together in a bowl in the microwave.
